Mix all the herbs in the bowl. Carefully fold in the panko, red pepper, and ground chicken until evenly mixed, then form into patties. Let the patties stand in the refrigerator for a minimum of 2 hours.
CURRY MAYO
Mix all the ingredients until evenly blended, then place on the line for service.

MANGO CURRY BURGER PROCEDURES
Season the curry burger patty on both sides and place on the grill or flat top. Cook the patty until an internal temp of 165°F: 6-8 minutes.Toast the potato roll in the vertical toaster or flat top. Place the toasted sides of the roll up on the plate or packaging.Spread the curry mayo on the toasted side of bottom bun.Place the spinach on the curry mayo.Place the tomato on the spinach.Spread the mango sauce on the toasted side of the top bun.When the burger reaches an internal temp 165°F top with the paneer cheese and place under broiler or cover to allow cheese to soften.Place the burger on the tomato. The burger can be served open face or topped with the top bun.
