Thai Noodle Salad

Pad Thai was the inspiration for this little gem of a salad. One could use Soba noodles, I like the chow mein, or even to be more authentic… use some rice noodles, either way – use spinach, grill some Thai Peanut marinated chicken and top with all the pad thai goodies you can think of.


6 ounces of an Asian noodle
¼ cup Frozen shelled edamame
½ a carrot match sticks
¼ of a red onion, thin sliced Few sprigs of fresh Cilantro A few torn leaves of fresh basil
1 4 ounce chicken breast marinated in Litehouse® Thai Peanut Dressng and grilled then sliced into a fan of four equal parts
2 ounces of fresh spinach leaves Bean sprouts if you desire and a spritz of lime Chopped peanuts, sesame seeds… ect.
6 ounces Litehouse® Thai Peanut Dressing


Cook and slice the chicken, prep the spinach, and noodles… slice and chop the other ingredients and then arrange in a decorative way on the plate. Drizzle with the Litehouse® Thai Peanut dressing and enjoy
