Sugar Snap Pea Caprese Salad

Ingredients

1 bunch Mann's Broccolini
8 oz Mann's Stringless Sugar Snap Peas, cut in half
3 Roma tomatoes, cut into bite size pieces
3 Tbsp Litehouse® Instantly Fresh Basil
8 oz Mozzarella cheese, fresh mozzerella in water, cut into bite size
4 tbsp Litehouse® Balsamic Vinaigrette 
Salt & Pepper to taste

Directions

Blanch one bunch of Mann's Broccolini in a large pot of boiling water for 30 seconds so stalks are crisp-tender. Immediately submerge in a bowl of ice water to stop the cooking process. Drain and pat Broccolini dry with paper towel. Cut Broccolini into bite size pieces and place into large bowl. Combine sugar snap peas, tomatoes, basil, mozzarella cheese, Litehouse Balsamic Vinaigrette, and salt and pepper. Gently toss all the ingredients and serve.
