Quinoa, an ancient grain recently re-discovered, comes to the front of this salad to be the star. Paired with fresh fruits and mint, this salad could be the main dish or play the side to a sandwich - either way, the result is delicious.
1 cup of dry quinoa
2 cups of water
½ cup of blueberries
½ cup cut up strawberries
½ cup of green grapes sliced in half
Approx. two fresh leaves of mint
¼ cup of Litehouse® Pomegranate Blueberry Vinaigrette
3 slices of a navel orange
2 each baby bib lettuce leaves
Cook the quinoa as directed, using the 2 cups of water, and set aside to cool. Wash and cut up the desired fruits. When the quinoa is cool, mix it and the fruits all together with the Pomegranate Blueberry Vinaigrette, season as needed, and at the very end rub the mint leaves and drop them in for the final stirs. Suggested serving is with some citrus fruit and in cups of lettuce
