2 dozen fresh large shrimp - peeled & deveined,
1 half jalapeño - seeds removed and minced,
1 ½ cup Napa Cabbage - shredded,
1 cup fresh snow peas - sliced thinly,
¾ cup carrot - shredded,
½ cup scallion - sliced thinly,
1 cup Litehouse Tangy Orange Citrus Dressing,
Olive oil, salt & pepper to taste
Pour ¼ cup of dressing in bowl with shrimp and allow to marinate for 1 hour. Heat grill or sauté pan on high heat. Add 1 tablespoon of olive oil to pan and cook shrimp for 2.5 minutes per side and reserve. Add jalapeño, carrots, cabbage and scallion to hot pan. Season lightly with salt and pepper, toss well for 2 minutes and turn off heat. Place warm vegetables in a bowl with the sliced peas. Combine with ¼ cup of Litehouse dressing. Place vegetable sauté on plate and top with cooked shrimp. Serve additional dressing on side.
