Grilled Caesar Salad with Herbed Focaccia Croutons

Grilled Caesar Salad with Herbed Focaccia Croutons


1 loaf herbed focaccia bread, cut into 1-inch cubes (about 3 cups)*
4 Tbsp butter
2 cloves garlic, minced
¼ cup coarsely grated parmesan cheese
2 heads romaine, cut in half lengthwise
Freshly ground pepper, to taste
1 cup Litehouse® Caesar Caesar or,
Litehouse® OPA Caesar


Melt the butter in a large skillet and add the bread cubes and garlic. Toast over moderate heat for about 5 minutes, stirring cubes often until golden on all sides. Remove from heat and set aside.
Using about ½ cup Litehouse® Caesar Dressing, brush on cut side of romaine. Grill on both sides, about 1 minute per side. This can be done under the broiler also. Place on plate and drizzle with remaining 1/2 cup Litehouse Caesar Dressing, parmesan cheese, fresh ground pepper and croutons. *Use pre-packaged focaccia croutons to make this unique twist on Caesar salad even easier.
