Won Ton Delight

Looking for a unique appetizer with lots of appeal and favorite ingredients? With Ranch dressing, sausage and cheese, these mini "quiches" fit the ticket.

Ingredients

1 lb pork sausage,
1 ½ cups sharp cheddar cheese, shredded,
1 ½ cups Monterey Jack Cheese, shredded,
½ cup sliced black olives,
½ cup red or green bell peppers, chopped,
1 cup Jalapeno Ranch Dressing,
50 count wonton wrappers

Directions

Preheat oven to 350 degrees. Cook the sausage in a skillet until brown and crumbly, stirring frequently and drain well. Combine sausage, cheese, olives, peppers and Litehouse Jalapeno Ranch Dressing in a bowl and mix well. Brush both sides of won ton wrappers with vegetable oil and fit into lightly sprayed mini muffin cups. Bake for 5 min or until light brown. Fill the cups 2/3 full with the sausage mixture. Bake for 7 minutes longer or until the cheese melts. Remove from the muffin cups immediately. Serve hot or cold. Yield: 4 dozen. Note: The cups may be baked for the first 5 minutes and removed to a baking sheet or wire rack to be filled and baked at a later time.

Chicken Cheese Ball

A great idea for an appetizer. Easy to prepare.

Ingredients

1-5 oz. can chunk chicken, drained
1 cup Litehouse Ranch Dressing
16 oz. Cream cheese, softened
1 cup pecans, chopped & toasted

Directions

Combine dressing and cream cheese in a mixing bowl. Beat at medium speed with an electric mixer until blended. Add chicken and mix well. Shape into a ball; roll in pecans. Cover & Chill.

Cajun Chicken Salad

A spicy approach to an old classic.

Ingredients

2 boneless chicken breasts,
1/2 cup black olives,
1/4 cup bean sprouts,
1 large tomato, sliced,
1 hard boiled egg, sliced,
Chow mein noodles,
Romaine or green leaf lettuce, shredded,
Cajun seasoning (to taste),

Directions

Marinate Cajun with boneless chicken breasts. Grill or broil until done. Put lettuce on salad plates. Top with olives, bean sprouts, tomatoes, egg and chow mein noodles. Slice chicken into thin strips and place on top of salads. Top with dressing.

Broccoli & Carrots with Fresh Orange Sauce

A fresh and healthy side dish topped with an award winning dressing.

Ingredients

4 chicken breasts, boneless, skinned, 
4 cups Broccoli & Carrots
½ cup Litehouse Tangy Orange Citrus
1 green onion sliced
½ basil leaves, dry, crushed
¼ tsp. black pepper
1 navel orange, peeled and thinly sliced

Directions

Grill or broil chicken.  In a pan, steam Broccoli & Carrots for 5 minutes, or until tender but crisp.  Transfer vegetables to plate and keep warm.  In the same pan, add Litehouse Tangy Orange Citrus Dressing.  Stir in vegetables.  Toss gently to coat with sauce and serve immediately.

Crab Jalapeno Stuffed Peppers

A delightful snack or appetizer! This treat is delicious and not too spicy!

Ingredients

1 cup Crab
6 oz. Green chilies, diced
2 Tbsp. Cilantro leaves, chopped
1/2 cup Monterey jack cheese, shredded
2 large red peppers, seeded and halved
1/4 cup Litehouse® Jalapeno Ranch

Directions

Preheat oven to 400 degrees F . In a medium bowl, add crab and Litehouse Jalapeno Ranch dressing, green chilies, and cilantro. Stuff this mixture into the halved red peppers. Place peppers on greased cooking sheet and cover. Bake for 30 minutes. Uncover and sprinkle cheese on top. Bake an additional few minutes for cheese to melt.

Combine the pineapple, carrots, dates, ham and cabbage in a large bowl. Pour the Litehouse Coleslaw dressing over the slaw and toss. Divide the coleslaw onto the tortillas and roll into a wrap.

15 oz spring greens
3/4 cup fresh blueberries
1 cup dry roasted walnuts chopped
1 cup Blue Cheese Crumbles

Ingredients

1 bunch broccoli florets, blanched and cooled
8 slices bacon, fried and crumbled
1 cup raisins (or dried cranberries)
1 red onion, cut in slices
Salted sunflower seeds 
1 cup Litehouse® Bleu Cheese Vinaigrette or,
Litehouse® Lite Bleu Cheese
 

Directions

Blanch broccoli for 2 minutes. Drain and run under cold water. Combine all ingredients. Toss to coat. Sprinkle with sunflower seeds.

Savory Greek Yogurt Gobbetti with Olives

This elegant, savory pasta and cheese side dish gets its creaminess and flavor from OPA Feta Dill Dressing. Use lower-fat ingredients and still achieve full flavor in recipes with Litehouse Foods’ new Greek-style yogurt dressing.

Ingredients

16 oz whole wheat Gobbetti Pasta
2 cups 2% milk
6 oz 2%-milk sharp cheddar cheese, shredded
3 Tbsp. “Three Cheese Egg Beaters”
½ cup Litehouse® OPA Feta Dill 
1 3.8 oz can sliced, ripe black olives, drained

Directions

Pre-heat oven to 350 degrees Fahrenheit. Prepare pasta according to package directions. Drain pasta and set aside.
Heat milk until it begins to simmer (but not boil). Turn off heat, add cheese and stir until cheese melts. Place pasta into 3-quart baking dish. Add egg product, OPA Feta Dill Dressing, and olives.  Stir to blend ingredients.
Bake pasta for 15 minutes until it becomes bubbly and brown on the edges. Garnish with Oregano and serve.
