Bourbon Peach Frozen Yogurt with Caramel-Pecan Swirl

Bourbon Peach Frozen Yogurt with Caramel-Pecan Swirl

Settle into the sweet pace of summer with a scoop of this seemingly sinful (but not) peach frozen yogurt featuring a hint of bourbon and caramel-pecan swirls. Take advantage of a bumper crop of seasonal fruit by creating quick and easy desserts at home.   

 

Ingredients

3 ripe peaches; peeled, pitted and sliced
3 Tbsp bourbon
3 cups unsweetened, no-fat plain yogurt
6 packets Stevia*
½ cup Litehouse® Caramel (room temperature)
1/3 cup honey pecans (or plain pecans), coarsely chopped

Directions

In a small skillet, add peaches and bourbon over medium-high heat. Continue stirring for approximately 3-4 minutes until the juices are browning and the alcohol has burned off. Allow to cool to room temperature.
 
Place the peach mixture, yogurt and Stevia in a blender; puree until smooth.
 
Transfer the peach mixture to work bowl of electric ice cream machine and process according to manufacturer’s directions (usually about 20 minutes).
 
Spoon peach frozen yogurt (still soft-serve) into 9”x 9” pan and drizzle the room-temperature caramel dip into large ribbons across the top. Sprinkle evenly with pecans. Drag back and forth across the pan with a dull knife to gently redistribute some of the caramel and nuts.
Serve immediately or transfer to a container and allow to firm up for an hour or two in the freezer.
 
*If you prefer, skip the Stevia sweetener and substitute vanilla-flavored non-fat yogurt for the plain yogurt.

Baked Apple Split Topped with Vanilla Yogurt and Caramel Dip

Litehouse Chef Tony Merola™ created this recipe in order to provide a delicious seasonal treat!

Ingredients

4                      Tart green apples
½ c                 Brown sugar
4 tb                 Butter
2 t                   Ground cinnamon
4 scoops       Vanilla frozen yogurt
lots  of          Litehouse® Premium Caramel Dip

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  1. Scoop out the core from top of the apple, leaving a well. Do not cut all the way through.  Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter.  Place in a shallow baking dish and sprinkle with cinnamon.
  1. Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.  Cut apples into quarters  (leave intact).  Place vanilla yogurt in the middle of baked apple and top with Litehouse® Premium Caramel Dip.

Tropical Waldorf Salad

The tropical flavors of pineapple, banana and papaya teamed with celery and walnuts to create a unique salad.

Ingredients

½ cup walnut halves
1 can (20 oz.) pineapple chunks, drained
2 stalks (1 cup) celery, chopped
1 banana, sliced
1 papaya, peeled, pitted, cubed
1 Tbsp. honey
1 Tbsp. lime juice
¼ cup chopped walnuts
1/2 cup yogurt, plain or vanilla
1/2 cup Litehouse® Raspberry Walnut Vinaigrette or,
Litehouse® Poppyseed  or,
Litehouse® Pomegranate Blueberry Vinaigrette 

Directions

Mix together the Litehouse® Dressing, honey, lime juice and 1/2 cup vanilla yogurt in small bowl. In large bowl, gently toss together all ingredients except the 1/4 cup chopped walnuts; add dressing and mix gently. Sprinkle with chopped walnuts. Chill and serve.
